Anyone Can Make This Soup, Soup

If you are, like me, a lazy cook then you’ll love this. All you need be able to do is peel and roughly chop. And have a blender.
Here I used:

  • 2 small red onions
  • 1 garlic clove
  • 700g sweet potatoes (or use a combo with butternut squash or pumpkins, whatever’s in season)
  • 500ml chicken stock (homemade if you’ve got it)
  • s+p
  • Olive oil and walnuts to finish

Peel and roughly chop the veg. In a large saucepan start to sweat the veg in a splash of the stock. After 5 mins add the rest of the stock, season and simmer for 15 mins or until the veg is cooked and soft to blend. Whack it all in the blender, season again if needed… and BINGO! A super nourishing soup that the kids love too because it’s nice and sweet. Finish with some crumbled walnuts and a splash of olive oil. Now how easy is that?
