Banana nutty loaf

This is my Banana Nutty Loaf – it’s super easy to make, packed full of nutritious ingredients, vvv low on sugar and of course tastes I N C R E D… trust me, I ate half of the loaf before I took a photo.

Dust off your apron and get this in the oven ready for your tea time or tomorrow’s brekkie. Enjoy it on its own or toast it and spread with butter…

Here’s how:

  • 3 cups of ground nuts – I used a mixture of walnuts, almonds, pumpkin seeds, and linseeds
  • 3 eggs
  • 1 ripe banana
  • 1 tbsp honey (2 if you want it sweeter)
  • 3 tbsp olive oil (or melted coconut oil would work)
  • 2 tsp baking powder
  • Pinch of salt

Whack it all in a food processor… pop it in a loaf tin (you might need to line yours etc) and cook for 30mins at 180C fan oven. Bingo!
